Do stainless steel sinks run the risk of rusting?

Usually stainless steel does not rust. But in case the running water is rich in iron, then it can create rust on the surface. But this rust stains are not part of the stainless steel. They are deposits on the surface of the sink. Rubbing the rust with an abrasive cleaner will remove it.
